Happy Thanksgiving. There’s no holiday which better exemplifies all that NYC Food Guy stands for: good food and a lot of it. So for your gluttonous pleasure, I present to you something that can induce food coma by merely viewing it: Turbaconducken. Happy Thanksgiving!
I am at my aunt’s with my cousin and two other friends. It is always a feast over here 🙂 The Turkey was one of the best I’ve ever had, so moist and tasty! That was the highlight for me along with an almond tart for dessert. THAT was so amazing! Light crust, a not too sweet almond paste as a filling and some roasted almonds sprinkled over the crust on top. Heaven 🙂

Mmmmmm, turbaconducken just made me hungry again. Fellow posters, here’s an idea for some of that leftover turkey…make a turkey casserole and serve it over rice. At least it’s different from just a sandwich.

That almond tart sounds awesome, what made the turkey so tasty? Any secrets? I spent Turkey day with some family and had a great time, my favorite part of the meal was actually some delicious brisket with the turkey coming in a very close second. Believe it or not though, I think the most important part of the meal is good bread stuffing. It really brings everything together.

The secret to the great turkey? No idea 🙂 I wouldn’t even know how to begin making one, however it was really really moist and tender and had some great seasoning to it too.
I love some good bread stuffing too, although I confess know little about it as I haven’t had much of it in my life time.

I went to a relative’s house and they made a casserole the next day. As for any turkey secrets, it’s all about the seasonings (rosemary, sage, and thyme for me), but more importantly, where you put the seasonings. Some people suggest sticking holes in the turkey and filling it with seasonings, I personally slide the seasonings between the meat and the skin of the turkey. It almost looks bruised before cooking, but afterwards, it’s never a dry bird.

This year for Thanksgiving, I had a small get together at my place. There was a total of 6 people, and as much as I love leftovers, I still had 2 more dinners to go to with my family, so I made this dinner filling, but small enough to have little leftover.
Instead of getting a whole turkey and dealing with that nightmare in my tiny kitchen, I got a de-boned breast. About 3.5 lbs if my memory is serving me correctly. I cut a “T” shape into it, and opened it and flattened it out, it was about 3/4 inch all around and spread out about 12-14 inches. While I did that I soaked some golden raisins in vermouth, once plump, I mixed them with some ground pork, diced pancetta, toasted pine nuts, and some seasonings. Then I spread this mixture on the turkey, and rolled it up, tied it with twine, and seared it. Next I wrapped it in bacon and popped it in the oven for close to two hours. I basted as it cooked.
For the sides I made stewed green beans with bacon, sweet potato fluff, home made stuffing, 2 types of buttermilk drop biscuits (bacon and black pepper, and cheddar with scallions) and home made cranberry sauce. For dessert I made a cranberry/apple pie topped with home made whipped cream. I used a recipe from Cooks Illustrated for the crust which calls for half vodka half water, it yields a crisp, buttery, flaky crust that I am still proud of today.
This was my Thanksgiving in a nutshell, it was a great time and everyone left full and happy.

Interesting Turbaconducken ! And probably quite healthy too. I was led to this site via a UK online newspaper article “This Is Why You’re Fat…”
Your recipe was suggested as not being particularly good by virtue of its inclusion in that article. However, a Christmas feast in merrye olde Englande could have been a quail in a pigeon in a woodcock in a pheasant in a duck in goose in a swan in a turkey… or similar. the bacon just basts the meat and stops it drying out…
Check out UK chef Hugh Firnley-Whittingstall’s recipe as shown on British Tv just before Christmas. He did a mediaeval banquet which fed a cast of thousands…. healthy ? You decide.
